Heavenly Father, let us remember that the good news of Jesus’ birth has the power to bring us great joy this Christmas season. Our joy isn’t dependent on what is going on in our lives, in our world, or the people that we are with. No earthly thing can ever give us complete joy; that joy comes only from you. That joy that flooded the hearts of the shepherds, the angels, the wise men, the hosts of heaven, and Mary and Joseph is the joy that still has the power to overwhelm our hearts with rejoicing.

God, help us to remember that Christmas is not about decorations or the twinkling eyes of children;  the gifts we give or the gifts we receive. Christmas is the time to gather as a family to celebrate the fact that Your Son became man to enable us to become Your sons and daughters.

May you grant the light in Christmas which is faith;  the warmth of Christmas, which is love;  the radiance of Christmas, which is purity;  the righteousness of Christmas, which is justice;  the belief in Christmas, which is truth;  the all of Christmas, which is Christ. Amen.

Christmas Creamed Corn

INGREDIENTS

  • 5 strips bacon
  • 4 cups (24 ounces) frozen corn
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 2 Tablespoons sugar
  • 1 teaspoon kosher salt
  • 2 cups heavy whipping cream
  • 1 teaspoon fresh cracked black pepper
  • 4 Tablespoon grated Parmesan cheese, divided
  • Fresh chives for topping

INSTRUCTIONS

  1. Preheat oven to 400 degrees.
  2. Cut bacon into small cubes and fry in a medium-sized skillet. Remove from pan and leave about 1-2 tbs of bacon grease, discarding extra.
  3. In the same pan, melt butter and whisk in flour to make a roux. Let bubble for 1-2 minutes.
  4. Slowly whisk in cream, sugar, salt, and black pepper and bring to a slow boil. Stir until mixture begins to thicken.
  5. Reduce heat to low. Stir in corn, half of the Parmesan cheese, and half of the bacon. Let simmer for 5 minutes.
  6. Sprinkle with remaining cheese and bacon and transfer to the oven. Brown in the oven for 5 minutes or until the cheese begins to brown (you can also broil for 1-2 min but watch carefully so it doesn't burn). Top with fresh chives and let cool slightly before serving.
