Christmas Creamed Corn
INGREDIENTS
- 5 strips bacon
- 4 cups (24 ounces) frozen corn
- 2 Tablespoons butter
- 2 Tablespoons flour
- 2 Tablespoons sugar
- 1 teaspoon kosher salt
- 2 cups heavy whipping cream
- 1 teaspoon fresh cracked black pepper
- 4 Tablespoon grated Parmesan cheese, divided
- Fresh chives for topping
INSTRUCTIONS

Preheat oven to 400 degrees.

Cut bacon into small cubes and fry in a medium-sized skillet. Remove from pan and leave about 1-2 tbs of bacon grease, discarding extra.

In the same pan, melt butter and whisk in flour to make a roux. Let bubble for 1-2 minutes.

Slowly whisk in cream, sugar, salt, and black pepper and bring to a slow boil. Stir until mixture begins to thicken.

Reduce heat to low. Stir in corn, half of the Parmesan cheese, and half of the bacon. Let simmer for 5 minutes.

Sprinkle with remaining cheese and bacon and transfer to the oven. Brown in the oven for 5 minutes or until the cheese begins to brown (you can also broil for 1-2 min but watch carefully so it doesn't burn). Top with fresh chives and let cool slightly before serving.
