Creamy Lemon Chicken Gnocchi Soup with Artichoke Hearts

It has been said, a person's soup preference to specific personality traits could lend some truth to the old saying "You are what you eat."

Researchers say that a person's favorite soup can reveal everything from how competitive, adventurous, or social a person is.

There is a strong psychological connection between our preferences for certain foods and who we are as people. Comfort foods play an important role in counteracting overstimulation in our lives, and the types of foods we eat indicate the level of stimulation we are trying to moderate.

The lifestyle of today's culture - a reliance on convenience, speed, and the disappearance of the traditional meal - has also heightened soup's popularity.

According to a recent survey, 67 percent of Americans agree that soup is one of their favorite comfort foods because it makes them feel better when they are sick, it's healthy and it brings back pleasant childhood memories.

Chicken noodle was the overwhelming favorite, followed by vegetable, tomato, and New England Clam Chowder (this one shocked me!).

According to a recent study, if your go-to soup is chicken noodle, you've got a big heart and tend to put others before yourself. Family is super important to you, and you prefer to stay in rather than go out. People who eat chicken noodle soup are loyal, relaxed individuals who are you’re loved by pretty much everyone you meet. You have a large group of friends because you know how to make everyone happy. You’re confident and always strive to make a good impression on everyone you meet. You live a simple life and like sticking to the classics—whether that be movies, books, or even your favorite foods.

Tomato soup was the most affectionate soup sign. If tomato soup is your favorite, you are the one who is always up for the next adventure and if someone dares you to do something, you're probably going to take them up on the challenge. Affectionate, fond of pets, sociable, adventurous, book lover, creative, and loves to cook.

Chili beef soup lovers were found to be the most competitive, are TV fans, and most likely are on a first-name basis with the local pizza delivery person.

Vegetable soup lovers tend to be nutrition-conscious, outgoing, frequent churchgoers, and take risks, according to the survey. These soup aficionados were homebodies at heart, less likely to be a world travelers, less likely to be spontaneous, and more likely to read family and home magazines.

New England Clam Chowder? You are sophisticated, intellectual, cynical, introspective, thoughtful, self-indulgent when it comes to food, and sarcastic, but you rarely cook from scratch. You're in love with the idea of falling head over heels in love and have a tendency to do just that and maybe a little too fast.

If French Onion is your favorite soup then you're probably outgoing but at the same time impatient. When you're not chatting up friends, you like to curl up with a good movie.

If potato soup is your more your speed, you're no-nonsense and you know what you want when you. At the same time, you crave peaceful situations and time with your family.

Chicken Noodle for loyal personalities; chili beef for the competitive. Don't get me wrong, I don't discriminate when it comes to soup. Spring, Summer, Fall, Winter, whatever the season is, I'll eat it. I love every kind of soup, and I was so lucky to fall in love with a man who loves soup as much as (if not more than) I do. Even with all the honorable mentions above, I just cannot narrow it down to one favorite.

If I had to rate my personality, I would say that I am just like all soups. I am warm and hearty. I always see the good in people and like putting others ahead of myself. I’m always looking to better myself and take initiative to make the world a better place by giving back in any way I can. In other words, by not having a favorite, I guess that makes me, one in a boullion.

Creamy Lemon Chicken Gnocchi Soup with Artichoke Hearts

INSTRUCTIONS

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons of butter
  • 1 yellow onion, chopped
  • 1 cup of carrots, chopped
  • 1  cup of celery stalks, chopped
  • 1 pinch each kosher salt and black pepper
  • 4 cloves garlic, chopped
  • 1 tablespoon Italian seasoning 
  • 1/2 teaspoon red pepper flakes
  • 4 cups chicken stock
  • 1 1/4 pounds boneless skinless chicken breasts or thighs
  • 1 lemon, zested
  • 2 (14.5-ounces) cans of chopped artichoke hearts, drained
  • 2 Tablespoons Dijon mustard
  • 1 1/2 cups heavy whipping cream
  • 1 pound fresh potato gnocchi
  • 1/2 cup grated parmesan
  1. In a large soup pot set over medium heat, combine the olive oil and butter. Once the butter has melted, add the garlic, onion, carrots, celery, and a pinch each of salt and pepper. Cook for 7-8 minutes, until fragrant.
  2. Add the chicken (seasoned with salt and pepper), Italian seasoning, red pepper flakes, and chicken stock. Simmer over medium heat for 20 minutes, until the chicken is cooked through. Pull the chicken out and shred using 2 forks. Add back to the soup.
  3. Stir in the artichoke hearts, dijon, lemon zest, cream, parmesan, and gnocchi. Cook until warmed throughout, about 5 minutes. If the soup is too thick, add additional broth.
  4. Serve the soup topped with parmesan. Enjoy warm, preferably with a crusty piece of bread.
